INGREDIENTS:

  • 1 cup light vegan mayonnaise (250 mL) your choice
  • 4 Tbsp. lemon juice (60 mL)
  • 1 tsp. Himalayan salt, your choice (5 mL)
  • 4 cups yellow potatoes, cooked, peeled and sliced (1 liter)
  • 1 cup sliced celery (250 ml)
  • ½ cup chopped onion, your choice (125 mL)
  • 1 cup grated carrot (250 mL)
  • 1 cup grated extra firm tofu (250 mL)

 

INSTRUCTIONS:

To make the dressing:  Combine the first three ingredients in a small bowl and mix well.

In a large bowl combine the remaining ingredients.  Add the dressing and toss to coat well.

Cover and refrigerate at least two hours to blend flavours well.

 

For those who like home-made dill pickles, you may want to add to the above ingredients, 2 medium-sized dill pickles, cut into small pieces.

On a hot summer day, this salad will be delicious, served with a green lettuce salad and perhaps a slice of good bread, if you so desire.

 

FACTS:

Yellow potatoes contain a powerhouse of nutrients, including vitamin C, and potassium and are low in fat content.  They are a delicious choice for meals.

Celery is a low-calorie vegetable with anti-inflammatory, anti-oxidant and blood pressure-lowering properties.

Onions help boost our immune system being rich in vitamin C, which also helps in iron absorption.

Onions are low in calories, but are rich in nutrients including Vitamin B6.  It has antioxidants which may reduce bone loss and osteoporosis.

Carrots have many health benefits.  Carrots improve eye health by improving our vision.  They help with weight loss.  They also improve skin health, support the digestive system and reduces the risk of heart disease and much more.

Extra Firm Tofu is a good source of protein which is essential for bone health.  It also contains potassium, calcium, and iron.
